They were a lifesaver when my husband and I were studying in Auckland. I haven&#8217;t made it since we left New Zealand, though&#8230;<\/p>\n<p>I should definitely make them again soon, but maybe two batches. One with less chili (for my daughter and mother-in-law) and one with more!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3300 aligncenter\" src=\"http:\/\/araopenpages.com\/wp-content\/uploads\/2019\/06\/tom-yum-noodles.jpg\" alt=\"tom yum noodles\" width=\"520\" height=\"500\" \/><\/p>\n<h3><em>Ingredients<\/em><\/h3>\n<ul>\n<li>1 packet tom yum paste<\/li>\n<li>800ml water<\/li>\n<li>3 bunches noodles<\/li>\n<li>4 mushrooms, sliced<\/li>\n<li>1 chili, chopped<\/li>\n<li>2\/3 packet spinach<\/li>\n<li>1 packet puff tofu, halved<\/li>\n<li>lemon juice, to taste<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3><em>Method<\/em><\/h3>\n<ol>\n<li>Boil the tom yum paste in water.<\/li>\n<li>Add the noodles to the boiling soup.<\/li>\n<li>When noodles are a little soft, add in chopped tofu and chilli.<\/li>\n<li>Let the tofu soak for about a minute.<\/li>\n<li>Add in the mushrooms and the spinach.<\/li>\n<li>Cook until ready.<\/li>\n<li>Serve while warm.<\/li>\n<\/ol>\n<p>This makes about enough for two people, plus leftovers!
