Honestly, I never knew that sticky date pudding and sticky toffee pudding were one and the same until I went searching for a recipe for my husband&#8217;s birthday.<\/p>\n\n\n\n<p>I used to love sticky toffee pudding, but after the restaurant my father used to take us to closed down, and then we started a vegetarian diet, I never found it again. I was a little bit worried this would not live up to my memories of the dessert, especially since I had to change about <a href=\"https:\/\/www.manusmenu.com\/sticky-date-pudding-with-butterscotch-sauce\">the recipe I found<\/a> to suit our diet.<\/p>\n\n\n\n<p>But it all worked out in the end, and it was so yummy my daughter was asking for seconds and thirds, and I have to make it again soon.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"520\" height=\"500\" src=\"http:\/\/araopenpages.com\/wp-content\/uploads\/2019\/11\/sticky-date-pudding.jpg\" alt=\"\" class=\"wp-image-3637\" srcset=\"https:\/\/araopenpages.com\/wp-content\/uploads\/2019\/11\/sticky-date-pudding.jpg 520w, https:\/\/araopenpages.com\/wp-content\/uploads\/2019\/11\/sticky-date-pudding-300x288.jpg 300w\" sizes=\"auto, (max-width: 520px) 100vw, 520px\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><em>Ingredients<\/em><\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Date Pudding:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>6 1\/3 oz. dates, pitted and roughly chopped<\/li><li>1 \u00bc cups water<\/li><li>\u00bd\u00a0tsp\u00a0bicarbonate of soda<\/li><li>\u00be cup firmly packed brown sugar<\/li><li>\u00bc cup butter, softened and chopped<\/li><li>1\/2 cup carnation milk<\/li><li>2 tsps custard powder<\/li><li>1 cup self-raising flour, sifted<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Butterscotch Sauce:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>3 \u00bd tbsp butter<\/li><li>1 cup brown sugar<\/li><li>1 cup cream<\/li><li>1\u00a0tsp\u00a0vanilla extract<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><em>Method<\/em><\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Date Pudding:<\/h4>\n\n\n\n<ol class=\"wp-block-list\"><li>Pre-heat your oven at 180\u00b0C (or 355\u00b0F).<\/li><li>Put the dates and water in a saucepan and bring it to a boil over a high heat.<\/li><li>Remove from the heat and add the bicarbonate of soda and stir until the dates start to break down.<\/li><li>Keep aside to cool, stirring occasionally.<\/li><li>In a separate bowl, beat the butter and sugar using a hand mixer (or stand mixer).<\/li><li>Add in the carnation milk and custard powder and beat until light and fluffy.<\/li><li>Add the date mixture and stir to combine.<\/li><li>Then carefully fold through the sifted flour.<\/li><li>Divide the mixture evenly between your moulds until 2\/3 full. This can make either eight individual portions or four bigger ones to share.<\/li><li>Place the moulds in a baking tray and carefully pour some water in the tray until it comes up to 1\/3 of the side of the moulds.<\/li><li>Bake for 40 minutes or until golden brown and a skewer inserted in the middle comes out clean.<\/li><\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Butterscotch Sauce<\/h4>\n\n\n\n<ol class=\"wp-block-list\"><li>Combine the butter, sugar, cream and vanilla in a small saucepan and cook it over low heat until the butter melts and the sugar dissolves.<\/li><li>Bring the sauce to a boil and then reduce the heat and cook for 5-6 minutes, or until the sauce thickens slightly.<\/li><\/ol>\n\n\n\n<p>To serve, invert the hot pudding onto a serving plate and top with the butterscotch sauce.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"520\" height=\"500\" src=\"http:\/\/araopenpages.com\/wp-content\/uploads\/2019\/11\/sticky-date-pudding2.jpg\" alt=\"\" class=\"wp-image-3638\" srcset=\"https:\/\/araopenpages.com\/wp-content\/uploads\/2019\/11\/sticky-date-pudding2.jpg 520w, https:\/\/araopenpages.com\/wp-content\/uploads\/2019\/11\/sticky-date-pudding2-300x288.jpg 300w\" sizes=\"auto, (max-width: 520px) 100vw, 520px\" \/><\/figure><\/div>\n\n\n\n<p>You can have this with ice cream as well, and I&#8217;m sure it will be yummy, but just as is?
