I just realised, despite having made these so many times over the past six years, I’ve not posted this recipe anywhere. I have barely adapted this recipe, because like the author of the original recipe claims, this is The Best Snickerdoodle Cookie Recipe. (Not that I’ve had many snickerdoodles, but I love this, so.)

The husband is not so fond of the cookies, so I don’t make them often anymore – we’re all trying to cut down on desserts, honestly, and this can be quite sweet. But when I want some soft and chewy cookies, these tend to be my go to.

Ingredients

  • 1/2 cup butter (1 stick), softened (150g)
  • 1/2 cup granulated sugar (150g)
  • 1/3 cup brown sugar (100g)
  • 1/4 cup carnation milk
  • 1tsp custard powder
  • 1/2 teaspoon vanilla
  • 1 1/2 cups flour (350g)
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cream of tartar

for rolling:

  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon

Method

  1. In a large bowl, cream together the butter and sugars with an electric mixer on high speed.
  2. Add the carnation milk, custard powder and vanilla and beat until smooth.
  3. In another bowl, combine the flour, salt, baking soda, and cream of tartar.
  4. Pour the dry ingredients into the wet ingredients and mix well.
  5. Preheat oven to about 150 degrees while you let the dough rest for 30 to 60 minutes in the refrigerator.
  6. In a small bowl, combine the sugar with the cinnamon for the topping.
  7. Take about 2 1/2 tablespoons of the dough and roll it into a ball. Roll this dough in the cinnamon/sugar mixture and press it onto an ungreased cookie sheet. Repeat for the remaining cookies.
  8. Bake the cookies for 12 to 14 minutes and no more. The cookies may seem undercooked, but will continue to develop after they are removed from the oven. When the cookies have cooled they should be soft and chewy in the middle.
  9. Try not to eat the whole batch in one go.

These can make about 15 cookies, or more if you make them smaller. I, personally, plan to use my smallest cookie scoop to make them the next time I do, just so I have a little more.
